  • 2 medium carrots
  • 1/2 cup gluten-free flour (garbanzo bean flour recommended)
  • 1/2 tsp baking powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 egg
  • 2 tbsp canola oil (or olive oil)

Instructions

  1. Grate the zucchini and carrots using a box grater. Squeeze out excess moisture using paper towels.
  2. In a large bowl, mix the gluten-free flour, baking powder, garlic powder, onion powder, salt, and pepper.
  3. Add the shredded vegetables to the dry mixture and stir until well coated.
  4. Whisk the egg in a small bowl and then combine it with the vegetable mixture until fully blended.
  5. Heat oil in a skillet over medium-high heat. Scoop about 1/4 cup of the mixture onto the skillet, flattening slightly to form patties.
  6. Cook until golden brown on both sides.
