  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz)
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • Olive oil, salt, pepper, cilantro, lime wedges (optional)

Instructions

  1. In a large pot, bring the water or chicken broth to a boil. Add the uncooked rice, cover, reduce heat to low, and simmer for about 18-20 minutes until cooked.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Add ground meat and cook until browned (5-7 minutes). Stir in taco seasoning.
