  • ½ cup salted butter
  • 1 cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon pure vanilla extract
  • 3 teaspoons all-purpose flour
  • For the crust: 2 ½ cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 cup very cold unsalted butter
  • ½ cup very cold water

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, drain peaches and mix with butter, sugar, spices, and flour.
  3. For the crust, combine flour, sugar, and salt; cut in cold butter until crumbly. Add cold water gradually to form dough.
  4. Roll out half the dough for the base and place in a greased baking dish. Pour peach filling over it.
  5. Roll out remaining dough for the top crust. Seal edges and cut slits for steam vents.
