Ingredients

Scale
  • 1 lb sirloin steak
  • 3 tbsp olive oil
  • 2 garlic cloves
  • 2 cups cooked grains (brown rice or quinoa)
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ cup kalamata olives
  • ⅓ cup feta cheese (optional)
  • 1 cup Greek yogurt
  • Fresh herbs (parsley or dill)

Instructions

  1. Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak evenly and marinate for at least 30 minutes.
  2. Prepare tzatziki: Mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in another bowl. Chill until ready to use.
  3. Sear the steak: Heat a skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes on each side until cooked to your liking. Let it rest before slicing against the grain.
  4. Assemble your bowl: In serving bowls, layer cooked grains as a base and top with sliced steak, tomatoes, cucumber, olives, feta cheese (if using), and drizzle with tzatziki.
