  • Zest from 3 small lemons (or 2 large lemons)
  • 1 cup unsalted butter, melted
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • ¼ cup granulated sugar for rolling (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  3. In a separate bowl, combine sugar and lemon zest until sandy. Mix in the melted butter, then add the egg and vanilla extract until smooth.
  4. Gradually stir in dry ingredients until combined. Gently fold in blueberries.
  5. Using a cookie scoop, place dough balls on the prepared baking sheet about 3 inches apart.
