  • 4 medium zucchini
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 23 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup cooked rice
  • Tomato sauce and cheese for topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Halve the zucchini lengthwise and scoop out seeds. Place cut-side up on the baking sheet, spray with cooking spray, and season with salt and pepper. Bake for 10 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Sauté onion and bell pepper for about 4 minutes until softened; add garlic and cook for another minute.
  4. Add ground turkey to the skillet; cook until browned (about 3–5 minutes). Season with salt, pepper, Italian seasoning, Romano cheese, tomato sauce, water, and diced tomato. Cook for an additional 5–7 minutes.
  5. Stir in cooked rice until fully combined. Remove from heat and fill zucchini boats with the mixture.
  6. Top each boat with mozzarella cheese and bake uncovered for an additional 15 minutes.
