  • ¾ cup (90g) whole wheat flour or gluten-free flour

  • 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup (120mL) pure maple syrup
  • 1 cup (90g) freshly grated zucchini, patted dry

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together the instant oats, flour, baking powder, cinnamon, salt, and nutmeg.
  3. In another bowl, combine melted coconut oil (or butter), egg, vanilla extract, and maple syrup.
  4. Mix the dry ingredients into the wet ingredients until just combined, then fold in grated zucchini.
  5. Chill the dough for 30 minutes before dropping rounded scoops onto the prepared baking sheet.
