  • 2 medium spaghetti squash
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh spinach
  • 6 cloves garlic
  • 1 cup chicken broth
  • 4 ounces cream cheese
  • 1/2 cup plain Greek yogurt
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3 tablespoons butter
  • 1 small onion
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley, divided

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise, remove seeds, brush with olive oil, and season.
  3. Bake cut-side down on a baking sheet for about 30-35 minutes until tender.
  4. In a skillet, cook cubed chicken in butter until golden; set aside.
  5. Sauté onions and garlic in the same skillet until translucent, then add spinach until wilted.
  6. Stir in chicken broth, cream cheese, Greek yogurt, parmesan cheese, thyme, and cooked chicken; let simmer.
  7. Scrape spaghetti-like strands from baked squash and mix half with the creamy filling.
  8. Fill each squash half with the remaining mixture and top with extra parmesan; bake for another 10-15 minutes until golden.
