  • 2 medium zucchini
  • 1 bell pepper
  • ½ onion
  • 5 ounces fresh baby spinach
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  • ½ teaspoon dried oregano
  • ¼ teaspoon paprika
  • 1 teaspoon garlic (minced)
  • 1½ tablespoon olive or avocado oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • ½ cup water
  • 2 tablespoons tomato paste

Instructions

  1. In a large skillet, cook the ground turkey over medium-high heat until browned. Season with salt, pepper, chili powder, oregano, paprika, and garlic.
  2. Remove the meat mixture and set aside. In the same skillet, add oil and sauté zucchini, onion, and bell pepper until tender.
  3. Return the turkey to the skillet along with water, tomato paste, and spinach. Stir well and simmer until everything is heated through.
