  • 1/2 cup Canola or vegetable oil
  • 1/4 cup Garlic (minced fine)
  • 1 Shallot (sliced thin)
  • 1 tbsp Sesame oil
  • 1 tbsp Korean chili flakes
  • 1 tbsp Ginger (peeled and grated)
  • 2 tsp White granulated sugar
  • 2 tsp Rice vinegar
  • 3 tbsp Soy sauce (reduced sodium)
  • 1 tbsp Sesame seeds (toasted, plus more for garnish)
  • 1/4 cup Green onions (sliced, plus more for garnish)

Instructions

  1. In a medium saucepan, combine cold canola oil, minced garlic, and sliced shallots. Simmer on low heat until garlic is golden brown and shallots caramelize (5–6 minutes).
  2. Stir in grated ginger and cook until fragrant. Add Korean chili flakes, white sugar, sesame oil, and toast for 1 minute.
  3. Mix in rice vinegar and reduced sodium soy sauce; simmer briefly before removing from heat.
  4. Boil water in a large pot; cook ramen noodles per package instructions, then drain.
  5. Toss hot noodles in the chili oil mixture until well-coated; garnish with green onions and sesame seeds before serving.
