  • ⅓ cup sugar

Instructions

  1. Flatten the chicken to about ¾ inch thickness for even cooking.
  2. In a mixing bowl, whisk together soy sauce, mirin, sugar, vegetable oil, and optional minced garlic or ginger until sugar dissolves.
  3. Reserve half of the marinade for glazing later.
  4. Marinate the chicken in the remaining mixture for at least 15 minutes (or overnight in the fridge).
