  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Oil for frying
  • Cilantro and diced onion (for garnish)

Instructions

  1. Soak dried chilies in hot water for 15 minutes. Blend softened chilies with onion, garlic, and tomatoes until smooth.
  2. Place beef in the crock pot and pour the chili mixture over it. Add broth, vinegar, oregano, cumin, bay leaves, salt, and pepper.
  3. Cook on low for 8-10 hours until the beef is tender.
  4. Shred the beef with two forks and mix back into the sauce.
  5. Heat oil in a skillet. Dip tortillas in broth fat and fry until crispy on both sides.
  6. Fill tortillas with beef mixture and fry again until crispy.
  7. Serve with extra broth for dipping and garnish as desired.
