  • 1 lb potato gnocchi
  • 4 cloves garlic
  • 1 cup heavy cream (or dairy-free alternative)
  • ½ cup chicken broth (or vegetable broth)
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil (or unsalted butter)
  • Salt, pepper, and Italian seasoning to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken pieces, seasoning with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through (7-10 minutes). Remove from skillet.
  2. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  3. Pour in heavy cream and chicken broth; stir to combine. Bring to a gentle simmer and add Parmesan cheese. Stir until melted.
  4. Add gnocchi directly into the sauce; cook according to package instructions until they float (2-3 minutes).
  5. Return chicken to the skillet along with any optional spinach or kale. Stir until heated through.
  6. Serve hot, garnished with red pepper flakes if desired.
