  • 6 (4 to 6 ounces each) boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 4 bell peppers, sliced; vary the colors to make it pretty!
  • 1 small onion, sliced
  • 1 recipe or package fajita seasoning mix; taco seasoning may also be used
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 2 cups cheddar cheese, grated

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet over medium heat, add olive oil and sauté chicken pieces until fully cooked. Set aside.
  3. In the same skillet, sauté sliced onions and bell peppers until tender.
  4. Return the chicken to the skillet and mix in fajita seasoning, sour cream, and softened cream cheese until well combined.
  5. Transfer the mixture to an oven-safe baking dish, top with grated cheddar cheese, and bake for 10-15 minutes until the cheese is melted.
