  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 head of garlic
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup | 20g fresh basil

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil for 6-8 minutes, then drain and steam dry.
  3. In a baking dish, toss potatoes with olive oil, herbs, salt, and pepper.
  4. Roast potatoes for 30-40 minutes until golden brown.
  5. Add feta and squeeze over half of the lemon juice; roast for another 15 minutes.
  6. Mix in mashed garlic, drizzle with honey, and garnish with fresh basil.
